Parmesan salad

Ingredients

85 g salad
2 tbls vinaigrette
50-60g parmesan cheese

8 tbls extra virgin olive oil
4 tbls apple cider vinegar
1 tbls (Dutch) mustard
pepper & salt

Directions

Our favorite quick salad, ideal as a lunch!

Put the salad into a bowl and add the vinaigrette. Mix gently. Add the parmesan cheese and mix gently again.

Vinaigrette ± 125ml: Put 8 tbls extra virgin olive oil in screw-top bottle or a jar. Add some pepper and salt, 1 tbls of Dutch mustard and 4 tbls of apple cider vinegar. Shake the oil. Keep in the fridge and use as required.

Good quality, reasonable variety and local where possible. It's nice knowing a week in advance what's going to be in the box, so that meals can be planned and to avoid waste. No problems with substitutions.
